I'm going to try and do a post everyday during my Summer Challenge. If possible, I'll include a photo from one of my meals.
Here's this morning's breakfast..
I need to clean my windows!
Couple hard boiled eggs with fruit salad. The stuff on top is coconut cream. It's easy to make and tastes fantastic! The cream is just the fat off the top of a can of coconut milk. I chill it in the fridge and then whip it with vanilla and cinnamon.
In a couple hours I'm doing a 4 mile run. Next weekend is the San Diego marathon. My job is to not get injured this week.
